Zucchini Spaghetti with Avocado and Nuts Sauce

Ingredients

  • Walnut
  • Pine nut
  • Zucchini
  • Avocado
  • Spinach
  • Fresh basil
  • Lemon juice

Instructions

  1. Wash the zucchini in plenty of water.
  2. Form them into spaghetti with a Spirelli cutter, julienne peeler or grater.
  3. To cook the spaghetti: either one minute in boiling water or sautéed in a pan with a little coconut fat. Set aside.
  4. For the sauce, beat the avocado, spinach, pine nuts, basil and lemon juice with a little water in a blender or food processor.
  5. Pour the pasta into a bowl, add the sauce, mix well together and top with crumbled walnuts.
