  • Medium onion
  • Medium cassava or yuca
  • Egg
  • Olive oil
  • Salt


  1. Peel and very finely chop the onion and lightly fry.
  2. When the onion starts to sweat a little, add the very finely sliced yucca and leave the mixture to sauté for 15­-20 minutes. When this is almost cooked we can turn the heat up so the yucca browns a little.
  3. Beat the eggs and mix with the yucca and sautéed onion until the mixture becomes smooth. Add salt to taste.
  4. Heat the frying pan with a little extra virgin olive oil and sauté or stir the tortilla mixture for a few seconds. Leave it to set a little and then turn over.
