- olive oil
- Medium onion
- medium cassava or yuca
- Peel and very finely chop the onion and lightly fry.
- When the onion starts to sweat a little, add the very finely sliced yucca and leave the mixture to sauté for 15-20 minutes. When this is almost cooked we can turn the heat up so the yucca browns a little.
- Beat the eggs and mix with the yucca and sautéed onion until the mixture becomes smooth. Add salt to taste.
- Heat the frying pan with a little extra virgin olive oil and sauté or stir the tortilla mixture for a few seconds. Leave it to set a little and then turn over.
