Wash and chop pepper, zucchini, tomato, parsnip and onion into small chunks.
Heat a large skillet over medium heat and add the ghee.
Add parsnips and onion and cook until golden brown.
Add the sausage and cook until browned on all sides.
Add garlic, pepper, zucchini, and salt.
Stir everything together and serve hot.
