Put quinoa in pot with water and bring it to a bowl then let simmer until quinoa is cooked.
Peel and cut the avocado, tomato and onion.
Heat a skillet with olive oil in it and add the kale and black beans, cook until kale is wilted.
Combine the quinoa, avocado, kale, black beans, tomato, onion and season with salt and pepper.
