- kidney beans

- Medium tomato
- Put quinoa in pot with water and bring it to a bowl then let simmer until quinoa is cooked.
- Peel and cut the avocado, tomato and onion.
- Heat a skillet with olive oil in it and add the kale and black beans, cook until kale is wilted.
- Combine the quinoa, avocado, kale, black beans, tomato, onion and season with salt and pepper.
