- Sweet potato

Preheat oven to 425 F.
Dice the sweet potato and toss with olive oil, salt, and pepper. Place on baking sheet lined with parchment (or oil). Roast in oven for 12-15 minutes.
Cook quinoa (bring 2 parts water, 1 part water to boil in a saucepan, reduce heat, cover, and cook 15 minutes).
Add salt, chili powder, cumin, lime juice, garlic, and cilantro to a blender and process into a dressing. Or, season quinoa directly with these.
Top quinoa with black beans, sweet potato, and dressing.
