- black bean
- olive oil
- lemon juice
- chili flakes
- Sweet potato
- Garlic powder
- Preheat oven to 425 F.
- Dice the sweet potato and toss with olive oil, salt, and pepper. Place on baking sheet lined with parchment (or oil). Roast in oven for 12-15 minutes.
- Cook quinoa (bring 2 parts water, 1 part water to boil in a saucepan, reduce heat, cover, and cook 15 minutes).
- Add salt, chili powder, cumin, lime juice, garlic, and cilantro to a blender and process into a dressing. Or, season quinoa directly with these.
- Top quinoa with black beans, sweet potato, and dressing.
