  • Butter
  • Salt
  • Flat fish
  • Lemon


  1. Season the sole with a little salt and cook on the griddle (greased beforehand with a little butter) for 3 minutes on each side.
  2. While this is cooking, melt some butter in another saucepan. Next, add the finely chopped parsley and simmer, stirring gently.
  3. Add the juice of half a lemon to the butter and turn off the heat.
  4. Cover the browned sole with the butter sauce from the other pan and sauté gently for a couple more minutes.
