- flat fish
- Season the sole with a little salt and cook on the griddle (greased beforehand with a little butter) for 3 minutes on each side.
- While this is cooking, melt some butter in another saucepan. Next, add the finely chopped parsley and simmer, stirring gently.
- Add the juice of half a lemon to the butter and turn off the heat.
- Cover the browned sole with the butter sauce from the other pan and sauté gently for a couple more minutes.
