Wash and cut the zucchini into long and thin slices.
Spread the slices of zucchini in twos, overlapping slightly and over the sole fillet. Add salt and pepper and roll the filet. Tie with kitchen twine or cross with a wooden stick.
Steam cook for 6 minutes.
Peel the garlic and chop with the mint and lemon zest. Mix with olive oil, salt and pepper.
Serve the rolls with the dressing over it.
