- olive oil
- garlic clove
- flat fish
- Wash and cut the zucchini into long and thin slices.
- Spread the slices of zucchini in twos, overlapping slightly and over the sole fillet. Add salt and pepper and roll the filet. Tie with kitchen twine or cross with a wooden stick.
- Steam cook for 6 minutes.
- Peel the garlic and chop with the mint and lemon zest. Mix with olive oil, salt and pepper.
- Serve the rolls with the dressing over it.
