  1. In a bowl, mix eggs well and add in salt and the crumbled sheep cheese.
  2. Pour egg and cheese mixture into a hot pan with some olive oil, spreading continuously as egg begins to thicken.
  3. Once edges start to turn golden brown, then fold both sides and flip the omelet. Cook until eggs are set.
  4. Place in a plate and serve.
