cooking instructions

  1. Pre-heat the oven to 180 degrees C, 350 degrees F, Gas Mark 4.
  2. Take the leaves off the sprig of rosemary and pour the lemon juice onto it with 3 tablespoonfuls of olive oil. Stir.
  3. Season the shoulder on both sides and soak it with the dressing you have just prepared.
  4. Roast for about 60 mins, adding water if necessary so it doesn’t dry out.
