- lemon juice
- Lamb shoulder
- Pre-heat the oven to 180 degrees C, 350 degrees F, Gas Mark 4.
- Take the leaves off the sprig of rosemary and pour the lemon juice onto it with 3 tablespoonfuls of olive oil. Stir.
- Season the shoulder on both sides and soak it with the dressing you have just prepared.
- Roast for about 60 mins, adding water if necessary so it doesn’t dry out.
