  • Olive oil
  • Flat fish


  1. Rub the soles fillets with salt, pepper, and olive oil (can add liked spices..cumin, parsley, paprika).
  2. Heat the frying pan or griddle. Place the fillet (with the skin) on the heat source for 1-2 minutes per side. The skin will turn golden and crispy.
  3. Remove from heat and serve.
