Cured cod with endive

CURED COD WITH ENDIVE5` MIN

ingredients

  • olive oil
  • escarole
  • Almond
  • Desalted cod
  • Roasted red pepper

cooking instructions

  1. To scald the pepper, put it in an oven pre­heated to 160 degrees C, 300 degrees F, or gas mark 2
  2. Wash the endive in plenty of water, if necessary add a little vinegar or lemon juice and leave to soak to make sure it is thoroughly cleaned.
  3. Mix all the ingredients together; endive, scalded pepper, flaked cod and nuts.
  4. Season to taste with olive oil, vinegar, salt, pepper….
