- Medium onion
- Clean and prepare the vegetables.
- Warm the coconut oil in a large pan over medium heat.
- Add the onion and garlic and sauté until soft.
- Add the broccoli with water to cover and bring to a boil.
- Lower the heat and simmer for 15 – 20 minutes until the broccoli is tender.
- Take out three quarters of the water and add coconut milk, pepper and curry.
- Blend the whole mixture.
