Cold mint and melon soup

COLD MINT AND MELON SOUP10` MIN

ingredients

  • black pepper
  • salt
  • lemon
  • Melon
  • Shavings of Iberian ham
  • Peppermint

cooking instructions

  1. Cut the melon into slices, removing skin and seeds.
  2. Put the flesh into the blender with the juice of half a lemon, a little salt, pepper, some mint leaves and a splash of olive oil.
  3. Blend it all together into a soup.
  4. Serve cold with a bit of very spicy Iberian ham (You can speed up the process by keeping the melon in the fridge beforehand).
