- Shavings of Iberian ham
- Cut the melon into slices, removing skin and seeds.
- Put the flesh into the blender with the juice of half a lemon, a little salt, pepper, some mint leaves and a splash of olive oil.
- Blend it all together into a soup.
- Serve cold with a bit of very spicy Iberian ham (You can speed up the process by keeping the melon in the fridge beforehand).
