- olive oil
- Red pepper
- Sweet potato
- Medium onion
- Medium tomato
- Finely chop the onion, pepper, tomatoes and sweet potato into little cubes and mix them in a bowl. Season with a splash of extra virgin olive oil, a tablespoonful of parsley and salt to taste.
- Place the fresh or unsalted cod loins on an oven tray.
- Cover the cod with the mixture you prepared earlier.
- Bake for 20 minutes at 180 degrees C, 350 degrees F, Gas Mark 4.
