Finely chop the onion, pepper, tomatoes and sweet potato into little cubes and mix them in a bowl. Season with a splash of extra virgin olive oil, a tablespoonful of parsley and salt to taste.
Place the fresh or unsalted cod loins on an oven tray.
Cover the cod with the mixture you prepared earlier.
Bake for 20 minutes at 180 degrees C, 350 degrees F, Gas Mark
