- olive oil

- Green pepper
- Desalted cod
- Finely slice the garlic and dice the pepper and onion.
- Put everything to sauté in a frying pan with some extra virgin olive oil. When the vegetables are lightly browned add the flaked cod and cook for 3-4 minutes. Put to one side.
- Beat the eggs, season and pour them into the pan with the cod.
- Leave the eggs to set and then fold the mixture over like a French omelette.
