Soak the agaragar seaweed for 5 – 10 minutes.
To make the omelette: beat the eggs and cook the omelette in a pan. Leave to cool and cut into small pieces.
Wash the lettuce in plenty of water, if necessary add a little vinegar or lemon juice and leave to soak to make sure it is thoroughly cleaned.
Peel and chop the carrots and mix with the lettuce, the agaragar and the omelette.
Season to taste with olive oil, vinegar, lemon, salt, pepper...
