  • Garlic clove

  1. Heat a pan greased with extra virgin olive oil. When it has warmed up, add the chicken livers and fry until they are brown and tender.
  2. Add the peeled garlic, crushed in a mortar with salt, and mixed with vinegar and water.
  3. Leave to simmer uncovered over a high heat until it reduces to a thick sauce.
