- coconut milk
- coconut oil
- curry powder
- Medium onion
- Chicken breast
- Quarter the chicken breasts and season.
- Brown the chicken for about 2 minutes in coconut oil and place it on a dish.
- Poach the finely chopped onion in the same pan. When it starts to brown add the coconut milk, chicken, curry powder and a little fresh, grated ginger.
- Leave it all to simmer for 10 – 12 minutes.
