- Coconut oil
- Fresh spinach
- Goat cheese
Wash the spinach in plenty of water and slice. Sauté in a pan with a little coconut oil for 5-7 minutes. Drain thoroughly and add the grated cheese.
Beat the eggs, season and add the spinach to the grated cheese and stir.
In a hot pan, cook the omelette until it sets on both sides and then serve.
