BELL PEPPER TACOS

Ingredients

  • Medium tomato
  • Garlic clove
  • Avocado
  • Rice
  • Black bean
  • Tomato sauce
  • Chili
  • Red pepper
  • Medium onion

Instructions

  1. Preheat oven to 375F
  2. Cut off the end of peppers and hollow the centers.
  3. Cook rice (15 minutes at a simmer, 1 part rice to 2 parts water) and season with taco seasoning.
  4. Add chopped onion, garlic, tomato, tomato sauce, chili peppers, black beans, and avocado to rice and mix all ingredients
  5. Stuff the peppers with rice mixture, cover with foil and bake at 375 F degrees for 20 minutes.
