- black bean
- tomato sauce
- garlic clove
- Red pepper
- Medium onion
- Medium tomato
- Preheat oven to 375F
- Cut off the end of peppers and hollow the centers.
- Cook rice (15 minutes at a simmer, 1 part rice to 2 parts water) and season with taco seasoning.
- Add chopped onion, garlic, tomato, tomato sauce, chili peppers, black beans, and avocado to rice and mix all ingredients
- Stuff the peppers with rice mixture, cover with foil and bake at 375 F degrees for 20 minutes.
