- lemon juice

- Chop the cooked beats into little pieces.
- In a bowl, mix avocado, onion, lime juice, apple vinager, dijon mustard, salt and pepper. Mix until a guacamole texture.
- To serve, plate a layer of beets, top with avocado cream and the remaining beets, in a circular pattern.
