  • avocado
  • beets
  • lemon juice
  • black pepper
  • Coarse salt
  • Dijon mustard
  • Apple vinager
  • Green onion

cooking instructions

  1. Chop the cooked beats into little pieces.
  2. In a bowl, mix avocado, onion, lime juice, apple vinager, dijon mustard, salt and pepper. Mix until a guacamole texture.
  3. To serve, plate a layer of beets, top with avocado cream and the remaining beets, in a circular pattern.
