Peel and dice beet. Cook with a little sea salt.
Peel the onion and the garlic. Chop very fine.
Wash and drain the beets once cooked.
In a bowl, mix the beet, the green onion, parsley, cilantro, garlic and the dressing (vinegar, sea salt, and olive oil).
