Sprinkle the meat with salt, pepper, oregano and thyme. Place on a grill oiled with extra virgin olive oil, sear on both sides and put to one side.
In the same pan, sauté the finely chopped onion and chopped ripe tomatoes.
Add the meat and the mushrooms.
Leave them to cook for 30 minutes on a slow heat so that the liquid reduces and the meat gets tender. If time is short, put it in a pressure cooker and it will be ready in 15 minutes.
