- olive oil

- Sprinkle the meat with salt, pepper, oregano and thyme. Place on a grill oiled with extra virgin olive oil, sear on both sides and put to one side.
- In the same pan, sauté the finely chopped onion and chopped ripe tomatoes.
- Add the meat and the mushrooms.
- Leave them to cook for 30 minutes on a slow heat so that the liquid reduces and the meat gets tender. If time is short, put it in a pressure cooker and it will be ready in 15 minutes.
