  1. Beat the eggs.
  2. Add the diced banana, the dates also diced, the cocoa and the cinnamon. Go through the blender until there are no lumps. There should be a consistent batter-like dough or a little thicker to make the pancakes in the pan but not too much because it should be able to spread well.
  3. Pour a few drops of olive oil in a nonstick skillet (important so they do not stick). When it is hot, with a ladle to throw a good spoon of mass in the center and moving the pan we extend it. We wait a few seconds and when it starts to curl around the edges, with a spatula we lift off the edges and gradually the whole pancake until we can turn it around. Each face needs less than a minute. Once the first pancake is made, it is not necessary to add oil for the rest.
