Preheat a griddle or skillet and when it’s hot enough, cook the sardines for about 4-5 minutes on each side according to taste.
Add coarse sea salt or Maldon salt, finely chopped garlic and parsley and a good splash of extra virgin olive oil. Alternatively you could bake them in the oven so their strong smell doesn’t penetrate the whole house!
