- Pre-heat the oven to 180 degrees C, 350 degrees F, Gas Mark 4 and in the meanwhile season the horse cheek steaks with rosemary, salt and pepper and place on a baking tray.
- Pour on a little extra virgin olive oil and brandy.
- While they are cooking the baking tray will fill up with gravy from the meat and sauce; keep basting the steaks with this until tender and cooked through (about 40 minutes).
